Do you like them thick? Fluffy? American style? I do! I love big fluffy pancakes like they sell in Ihop, but let’s be real, not many protein pancakes taste like that, most of them are dry, hard and just not great! I’ve been trying all different recipes to try and find the best mix for the perfect pancakes, and the recipe I have created, if I do say so myself, is by far the best tasting protein pancakes I have ever tried! Follow my recipe below and let me know what you think! (PS they are also low in carbohydrates and high in lots of different super foods!)
I love peanut butter and I love jam, they work fantastic together and really bring out the inner child in me! I love these for breakfast and sometimes even dinner, they really help curb my cravings!
Ingredients (Makes 3-4 small thick pancakes as shown in the image):
- 60g banana (or use a whole banana if you want more mixture/thicker pancakes)
- 15g oats (rolled oats is best)
- 30g protein powder
- 4tbsp almond milk
- 1/2tsp baking powder
- 1 egg
- 1 egg white
- For toppings: 15g any brand peanut butter you prefer (I like the organic crunchy type) and 15g no-added-sugar strawberry jam (it is literally just made from 100% strawberries)
In a blender, mix all the ingredients together until smooth (you will need to blend the mixture as the oats need to be fine for the pancakes to cook well and be fluffy!)
Using a low calorie cooking spray coat your pan in spray. I use a four pancake indent pan which I purchased from Amazon to give me the perfect shape; it also helps cooking the pancakes better in my opinion as they do not overcook/go runny when you attempt to flip them!
Leave to cook on a medium heat for about 2 minutes then flip and cook the other side.
Once the pancakes have cooked your ready to top them!
I always end up with four pancakes with that mix so I top 2 with the peanut butter and 2 with the jam and stack them on top of each other! I then top with a zero calorie syrup which you can buy from muscle food (or you can use regular syrup/honey)
