Flapjack is one of the best energy snacks with slow release carbs, you can wrap them up and off you go. You will rarely find me out and about without one in my bag for an emergency energy slump. On top of the energy kick, these flapjacks are high in protein, nuts, dried fruit and without any processed sugar at all as the chocolate is optional.
Easy to make with absolutely no skill or baking required and they will last up to a week in an airtight container.
What you need to make them:
70g Dessicated coconut
50g chopped nuts
3 scoops protein
8 tbsp. agave nectar
4 tbsp. water (cold)
75g melted dark choc
Put all your ingredients together in a bowl bar the protein powder and the linseed and rub together with your fingers until well combined. Then add your protein powder.
Also add your Linseed and combine together again until the whole mixture is sticky from the nectar.
Line a baking tin with wither foil or cling film and push the mixture in to the tin as compacted as you can.
Pop in to the freezer for 30 minutes and then pop in to the fridge for a further hour.
Melt your dark chocolate (around 2 minutes in the microwave) and then pop it in to a piping bag. Cut a small snip out of the end.
Then drizzle the chocolate across the flapjack in whatever style you like. Pop it back in to the fridge for 30 minutes until the chocolate has set and then remove evenly cut and serve.
These are delicious, moist and chewy. I wrapped mine in greaseproof paper and tied them up with a little bit of string for the lunch box. Just don't let them get to warm.
